Spring Salad

I don’t think you can go wrong with a garden fresh salad. This salad is crazy good. Here’s the recipe:
Spring Salad
1️⃣ 1/2 bundle of asparagus
2️⃣ 2 ears of corn
3️⃣ 1 cup cherry tomatoes- sliced in half
4️⃣ 1/4 cup diced red onion
5️⃣ 1/4 cup chopped mint
6️⃣ 2 sliced peppers * optional
For the dressing
7️⃣ 2 minced garlic cloves
8️⃣ 1/2 cup white wine vinegar
9️⃣ juice of 1 lemon
🔟 1 teaspoon salt, pepper, sugar, & olive oil

➡️ Preheat oven to 450° then bake corn & asparagus for 10 mins

➡️ While you wait add sliced tomatoes, dice red onions, & slice peppers. Add to a medium bowl
➡️ To a small bowl add all dressing ingredients & stir well

➡️ Remove corn & asparagus from oven-
Slice asparagus & remove corn from
cob & cut asparagus into small pieces then add to medium bowl
➡️ Pour dressing in & stir to combine all ingredients

➡️ Add mint after mixing - cover and refrigerate (stir in mint when ready to serve)
➡️ Eat ✌🏾
