Sweet Potato & Carrot Soup
Soup season is here. Soup is easy- you throw ingredients in a pot & then you have a hot meal.
This is sweet potato & carrot soup. Here’s what you will need to make it:
1️⃣. 4 sweet potatoes - peeled & diced in 1” cubes
2️⃣. 3 carrots- peeled & diced
3️⃣. 3 garlic cloves -diced
4️⃣. 1 yellow onion - cut into thick slices
5️⃣. 1 poblano pepper- cut into thick slices
6️⃣. 1 can coconut milk
7️⃣. 1 32 oz box of vegetable broth
8️⃣. 1 teaspoon paprika & turmeric
9️⃣. Salt & pepper to taste
🔟. Olive oil •
➡️ To a soup pot add 2 tablespoons of olive oil, onions, & garlic. Cook on medium low heat until
the onions are translucent.
➡️ Add the paprika, turmeric, salt, & pepper- stir to coat onions & garlic (about 2 mins)
➡️ Add the sweet potatoes, carrots, & poblano pepper. Stir- you might need to add a drizzle of olive oil- let that cook up for 5 mins
➡️ Pour in coconut milk & vegetable broth then cover the pot & turn down the heat a bit. Let the soup cook for 45 mins
➡️ Remove from heat & use an immersion blender or regular blender to blend soup.
➡️ Serve it up- I added dried rosemary as a garnish- Enjoy
