Sweet Potato stuffed Poblano Pepper
Not your typical poblano pepper recipe. I made these peppers as a side dish & topped with my salsa roja.

Here’s what you will need:
1️⃣. 2 poblano peppers (or more)
2️⃣. 1 sweet potato
3️⃣. 1 tomato
4️⃣. 4 garlic cloves
5️⃣. 1/4 cup- 1/2 cup sliced onion
6️⃣. 1/4 cup cilantro
7️⃣. 2 tablespoons olive oil
8️⃣. Salt & pepper to taste
➡️ Preheat oven to 400°
➡️ Add olive oil to medium pot over medium heat
➡️ Peel sweet potato & cut into bite -sized cubes then add to pot- stirring occasionally
➡️ Wash poblanos, slice down the middle & clean out the membrane & seeds
➡️ Slice garlic, onions, tomatoes, & cut cilantro
➡️ Add onion, garlic, salt, & pepper then cook until the onions are translucent
➡️ Add tomatoes & cilantro - turn off heat & mix in
➡️ Divide the sweet potato mixture between the 2 poblanos- cook uncovered for 30-40 mins. The longer you cook the more char you’ll get on the peppers. That’s it ✌🏾
